One of the best things you can do with zucchini. High heat, good char, sharp feta, and fresh mint. Done in 20 minutes and genuinely impressive.
Slice zucchini lengthways into 5mm planks. Toss with 2 tbsp olive oil and season well.
Heat a griddle pan or barbecue to very high heat. Grill zucchini in batches 2-3 minutes per side until charred and just tender. Don't move them around — let the char develop.
Whisk together remaining olive oil, red wine vinegar, garlic, and a pinch of chilli flakes.
Arrange grilled zucchini on a platter while still warm. Drizzle over the dressing, crumble feta on top, and scatter mint leaves.
Serve warm or at room temperature.
This is even better made slightly ahead and served at room temperature — the zucchini soaks up the dressing as it sits.
