The classic Italian salad on a stick. Made with tomatoes straight from the garden, good mozzarella, and fresh basil, this needs almost nothing else.
Thread a basil leaf onto a small skewer, followed by a cherry tomato, then a piece of mozzarella. Repeat until the skewer is full. Continue until all ingredients are used.
Arrange on a platter. Drizzle generously with olive oil and balsamic glaze.
Finish with flaky sea salt and a few grinds of black pepper. Serve immediately.
Only make this when your tomatoes are genuinely ripe and sweet. Out-of-season tomatoes will let you down here. The whole point is the fruit.
